Can KOTs route to different kitchen stations?

Yes. Items route to their stations - tandoor, wok, beverages and so on - so each section sees only what it has to prepare.

Do Swiggy and Zomato orders come in as KOTs too?

Yes. Aggregator orders, integrated through Urban Piper, land in the same KOT queue as dine-in and takeaway orders.

What happens when a table orders more mid-meal?

The addition fires as a fresh KOT tied to the same table and bill - the kitchen sees the new items, and the bill stays a single bill.
